- Abstract
- Green management of restaurants is at a preliminary stage, despite the increasing seriousness of environmental problems in the restaurant industry. This paper has its main purpose to develop environmental management criteria to certify national Green Restaurants(GRs), using the modified delphi Method. For the first round, panels were to distinguish and analyze adaptable and agreeable standards listed from Green Restaurant 4.0 Standard, ISO 14001 and other environmental standards. 147 environmental items were filtered to 48 items in this round. Structured questionnaire were again developed with the 48 items, asking each respondents their opinion. In the second modified technique, 11 factors were excluded again leaving five major criteria(energy efficiency, resource recycling, foods, human resources and strategy & miscellaneous) and 37 valid green restaurant factors that satisfy the Korean restaurant industry.
