Cheese is a common Western fermented food, and there are more than 1,000 types of cheese in the world. As wine has recently become a popular food in Korea, cheese has also become popular in the Korean dietary culture. It is not difficult to purchase European blue cheese at a nearby grocery store, and an increasing number of consumers are buying cheese knives. As a cheese lover, this study to intends to present a cheese knife design using taegeuk and eight trigram patterns among various traditional Korean patterns. Those patterns represent the foundation and identity of the Korean people. As there are a vast number of theories on taegeuk and eight trigram patterns, the study summarizes and arranges theories on the patterns with the focus on the Korean taegeuk pattern, the origin of taiji, which influenced the taegeuk pattern, and the creation principles of eight trigrams. As for the design aspect, cheese knives with various uses according to the type of cheese were selected to be organized in a table. In developing a design using taegeuk and eight trigram patterns, the patterns were combined with the function of cheese knives based on practicality. With regard to metal techniques, the characteristics of bamboo used as a handle and its symbolic meaning were investigated, and photos of the cheese knife making process, the connection structure between the blade and the handle, and the finishing decoration of the end of the handle were included. The study intends to explore the possibility of utilizing taegeuk and eight trigram patterns, which are symbols of expulsion of evil spirits and auspiciousness, thus contributing to the development of cultural products that can add to the value of K-brands.
