This study focused on laying the foundation for education to ethically utilize AI in the educational field through the exploration of AI ethics awareness of prospective nutrition teachers in a situation where AI education has been strengthened according to the 2022 revised curriculum. Data was collected and analyzed by conducting in-depth interviews with 10 prospective nutrition teachers who are enrolled as nutrition education majors at the Graduate School of Education located in the metropolitan area. As a result of the study, prospective nutrition teachers expressed concern that the development of AI technology may be disadvantageous to the socially underprivileged and emphasized the need to strengthen education and infrastructure to prevent resource imbalance and digital exclusion. It was recognized that AI should not be used as a substitute for the role of teachers, but as an auxiliary tool, and that teachers should convey emotional support and ethical values based on AI results. In addition, various educational measures using AI were proposed, and ways to help students improve their eating habits based on health information were sought. It also raised the need to develop a cooperative model between AI and teachers through an integrated approach to AI education and improve ethical awareness, and to strengthen critical thinking and ethics education. This direction is expected to contribute to improving the quality of education and inducing healthy eating habits for students through AI by prospective nutrition teachers.
